MUSHROOM BURGER

method:  

 Wash the mushrooms, squeeze the water out, remove the thicker lower parts (use them in the stir-fry) and tear the larger pieces into even noodles.

In a bowl, mix crushed cloves of garlic with soy sauce, maple syrup, olive oil, a pinch of black pepper and a teaspoon of ground smoked paprika. Cover the noodles in the marinade, massage it and then lightly squeeze out the excess liquid. Pierce the mushrooms with grilling needles or skewers and place them on the edges of the baking glass or tin, so that the container catches the juice while baking. Coat with the rest of the marinade.

Place in an oven heated to 200 °C and bake for 30 minutes. During baking, turn the mushrooms 2 times and coat again with the marinade.

At the end of baking, put the cut buns in the oven, cut side up. When they are heated and crispy, spread them with homemade mayonnaise, add lettuce, sprouts and microgreens, a slice of tomato, pickled onion and layer the baked mushroom.

 

HOMEMADE MAYONNAISE:

Be sure all ingredients have the same temperature. Put the egg yolk, Dijon mustard and a pinch of salt into the jar. Mix with an immerse blender, hold it  at the bottom of the glass in the start. Slowly pour in 100 ml of oil and when the mass thickens, slowly raise the mixer. At the end, add a spoonful of vinegar and mix.

 

PICKLED ONIONS:

Boil 150 ml of water, 80 ml of apple cider vinegar, a teaspoon of salt and 40 g of sugar in a small pot. Cut the cleaned onion into thin slices and put it in a jar with a lid together with chili, black pepper, chopped garlic and bay leaf. Pour over the marinade and, after cooling, transfer the jar in the refrigerator for at least a day.

☉ whole black pepper, salt
