SWEET POTATO GNOCCHI

● Cut cleaned and peeled sweet potatoes into smaller pieces and boil in a pot with water for 10 minutes. Drain and allow to cool.

● Blend the cooled sweet potatoes until smooth in a food processor. Combine with semolina flour (150 g), all purpose flour (100 g) and a pinch of salt. Manually create a light and non-sticky dough (the flour should be added according to the variety and juiciness of the potatoes).

● Transfer to a workdesk dusted with flour. Divide into parts (the size of a palm) roll out and then cut into small pieces the size of a nut. Roll these little bits in floured palms or on the worktop into the shape of “súľance”/gnocchi. Sprinkle with flour to prevent sticking and cook in a pot with boiling water for 5 minutes.

● Put drained and still hot gnocchi in a pan with hot butter, fry for a while, shake the pan or mix and serve immediaty. Sprinkle each portion with ground walnuts and pour a tablespoon of honey over each portion.

TRY THIS: You can replace nuts with ground poppy seeds or sweetened breadcrumbs, or with hot fruity sauce. Try to bake the gnocchi briefly, too! You can add walnut powder and honey directly to the pan, mix and serve immediately.
