METHOD:
☉ In a bowl, combine flour with water (ratio 1:1), add a pinch of salt, black pepper, dried garlic and smoked paprika.
☉ Cut the cleaned onion into quarters, separate into layers. Break the hemp tofu into more robust pieces of irregular shapes and add to the bowl together with the onion. Coat in the dough and collect on skewers or sticks. Sprinkle with sesame.
☉ Place on a baking sheet, bake for 20 minutes in a an oven preheated to 200 °C/fan and turn halfway through baking.
☉ While baking, prepare the marinade for brushing: mix a tablespoon of olive oil and a tablespoon of sesame oil with a tablespoon of maple syrup. Finally, add a few drops of apple cider vinegar. Brush the skewers with the mixture after 20 minutes of baking and then bake for another 7-8 minutes.
☉Cook the rinsed rice in water. Season with salt and lemon juice when cooked.
☉Serve with rice, spring onions, steamed peas and a portion of soy sauce or your favorite dip.
NOTES: The light taste of hemp tofu wrapped in batter and coated in marinade and sesame goes perfectly with roasted onions. You can easily slide the whole skewer into a pita spread with chickpea hummus, yogurt and salad while it is still hot. This way, you can bake servings for the whole party at once on one baking sheet.
